Cornwall Life meets Ian Brodey, Head Chef at the restaurant at Port Gaverne Hotel in Port Gaverne, near Port Isaac

How long have you worked at the restaurant?
I started as third chef in 1975 and apart from a nine-month break in 1980 Ive been here ever since, working my way up to Head Chef.

Where have you worked previously?
My first job after college was with Courage Breweries. I then spent six months near Looe gaining experience.

What are your food philosophies?
Food must be fresh, local and cooked to order you cant beat it.

Where is your favourite place to eat in Cornwall?
I hardly get time to eat out very often, but my wife is a great cook so I dont feel that Ive missed out too much. We were very impressed when we ate at the Nare Hotel near Veryan. I enjoyed the old-fashioned service and attention to detail.

What inspires you about Cornwall?
Getting up, looking out to sea and never forgetting how lucky I am to have lived and worked in Cornwall all my life.

What would you like to achieve at the restaurant?
I would like to see the high standards we have set being maintained and built on in the future. We get a lot of guests returning year after year, so we must be doing something right!

What is your favourite dish on the menu and why?
Any dish really, especially fish. If its not one of my favourites it doesnt go on the menu.

Baked whole sea bass with lemon grass, ginger and garlic
Beef strogonoff served with wild rice
Roasted stuffed sweet peppers, roast tomato stew and homemade foccacia bread

Homemade sticky toffee pudding
Rich chocolate and brandy mousse
