RECIPE: CHILLED CUCUMBER AND LOVAGE SOUP

INGREDIENTS

  • 1kg cucumbers
  • 50g lovage purée (use parsley if struggling to source lovage)
  • 75g of crème fraiche (10%)
  • Cornish sea salt
METHOD

  1. Wash and peel the cucumbers and cut into pieces
  2. Blitz the cucumbers to a smooth purée
  3. Add the lovage purée
  4. Blitz in the crème fraiche
  5. Pass through a fine chinois
  6. Chill over ice
  7. Season to taste
