Ingredients

  • 40g of dark chocolate, chopped

  • 40g milk

  • 105g self raising gluten free flour 

  • ¾ teaspoon xanthan gum

  • ¾ teaspoon salt

  • 40g cocoa powder, plus extra for sprinkling

  • 1 teaspoon ground cinnamon, plus extra for sprinkling

  • 170g unsalted butter, at room temperature

  • 190g granulated sugar, plus extra for sprinkling

  • 3 large eggs (180g) at room temperature

  • 75g dried apple, cinnamon and sultana baking pieces (available from Sainsburys in a 150g bag) 

  • 1 ½ teaspoons pure vanilla extract

  • Ganache Topping

  • 250ml double cream 

  • 340g chocolate (half dark, half milk)


Method

Packed with nuts, apple and cinnamon, these gluten free cupcakes are a delicious alternative to the traditional chocolate cake


• Preheat your oven to 160°c and place your baking cases in your bun tins.
• Add the milk and chopped chocolate to a saucepan and place over medium heat, stirring occasionally until the chocolate is melted. Put aside to cool.
• In a medium sized bowl, place the flour, xanthan gum, cocoa powder, cinnamon and salt and combine well with a fork 
• In a bowl, beat the butter and sugar for 5 minutes or until soft and well combined. Add the eggs one at a time, then the vanilla and beat. Next, add the chocolate and milk mixture and beat again until combined. Fold in the sultana and apple pieces
• Add the flour and cocoa powder mixture and fold in by hand using a spatula.
• Place into 12 cupcake cases and sprinkle the tops and edges lightly with a sugar, cinnamon and cocoa powder mix. Place in the oven and bake until a knife inserted in the centre comes out with no more than a few moist crumbs attached (about 25 mins).



To Decorate
• For the ganache: heat the milk until almost boiling, remove from the heat (or microwave) and add the chocolate, stir until the chocolate has fully melted, leave to cool and refrigerate until firm enough to pipe. 
• To decorate like the example in the picture: using a small disposable piping bag fitted with a No. 1.5 writing piping nozzle and filled with chocolate ganache, pipe a decorative pattern around the edge of the cupcake. Switch to another bag fitted with a medium sized twisted star nozzle to pipe the centre piece.
