How long have you worked at No 1 Rock Road?
No 1 Rock Road opened in April, so I have started work on the menus and organising my team. I am excited to be working in this restaurant, which has such incredible views over the estuary and countryside.

Where have you previously worked?
I previously worked as Executive Chef and Head Chef at Grosvenor House Park Lane in London and I have worked in the location and tour catering sector for 12 years for the band UB40, along with other celebrities such as Madonna, Seal and M People.

What are your food philosophies?
I like to cook good food, using locally sourced produce and offering good-value dishes, which then results in happy people! There are classic dishes on my menu that have been revamped, and impressive dishes that will excite your senses.

What is your favourite place in Cornwall?
Polzeath and Rock. I learned to surf at the age of seven at Polzeath Beach and have many friends who are lifeguards. The beach is a fantastic place to spend a day with friends and family and those Atlantic rollers are exhilarating, as are the sunsets. I love the ambience in Rock.

What inspires you about the county?
I moved away from Cornwall to London and have travelled all over the world, working in Greece, Hawaii and Japan. I cant wait to bring the culinary delights I have experienced to Cornwall, using locally sourced crab, lobster, oysters and mussels from our suppliers.

What is your favourite dish on the menu and why?
Using locally sourced produce and with such a variety of excellent local suppliers to choose from, my favourite dish would be either Porthilly Oysters, the catch of the day or slow-roasted oxtail ragu cooked in a tomato and vegetable sauce, served over fresh egg parpadelle pasta and finished with crisped banana shallots.

Fillet of Cornish beef, with diced cooked beetroot, rocket and horseradish crme fraiche
Local asparagus, mint, buffalo mozzarella, sun blushed tomatoes and extra virgin olive oil

Main courses
Rack of Cornish lamb, baby spinach, crushed new potatoes and a rosemary and anchovy dressing
Grilled whole lemon sole, new potatoes, carrot and zucchini ribbons, with a lemon and caperberry butter
Rich risotto of local mixed crab meat, lemon, lime and aged Parmesan with a rocket and balsamic reduction

Vanilla pannacotta with a rhubarb and grappa compote
Passion fruit tarte with Cornish clotted cream
Ginger and lime cheesecake
