Cornwall Life attends the launch of Fusion at the Carlyon Bay Hotel in Cornwall

BrendHotels'delightful Carlyon Bay Hotel, Spa and Golf Resort set high on cliffs with breathtaking views over St Austell Bay on Cornwall's south coast, has decided to expand their dining experiences. They're nowheading East, with the official opening of their new Fusion restaurant offering Asian cusine. Photos by Anita Newcombe.

The Brend Hotel Group is the largest in South West England with eleven hotels in Cornwall and Devon'smost beautiful locations. As a family-run AA four star hotel, theCarlyon Bay Hotel in Cornwallis a haven of good taste, good food,warmth and welcome.

We arrived just before 5pm and after wandering around the garden to admire the views at close-hand, we headed straight for the spa. Quite large with a lovely pooland picture windows offering a further opportunity to enjoy those views, the spa has a lovely jacuzzi, a steam room and sauna plus a beauty treatment room.

We found a lovely couple playing scrabble in the sauna and several other equally charming guests. The clientele at the Carlyon Baylast night were aged 50 plus but the new Fusion restaurant is likely to appeal to all ages. A traditional hotel with a funky Asian restaurantis a zany and brilliant notion. Of course there is also the more traditional Bay View Restaurant plus Terrace Lounge Dining and a more pub-like style in the Clubhouse.

We joined Justin Brend plus General Manager Peter Brennan and Area Manager John Allen in the Green Bar for drinks and canapes then moved through to Fusion for dinner. Other guests included Head of Visit Cornwall, Malcolm Bell and Chief Executive of Taste of the West, John Sheaves.

The menu in Fusionincluded a wonderful Vietnamese beef salad with lotus dressing, Cornish crab, pickled ginger, scallops, lime-steamed shrimp, an amazing wasabi sorbet and a papaya salad. Then came Teriyaki fillet of beef, Pho noodle broth, Sea bass, coconut broth, pork dumplings, red curry chicken, crispy duck with star anise and plum sauce and more. Am I making you hungry yet?

After dinner renownedCarlyon Baychef Paul Leakey joined us and passed round some rather smooth glasses of Japanese whisky - I don't drink whisky but this was gorgeous.

We enjoyed our overnight stayin a beautifully decorated sea facing room. Our visit to the Carlyon Bay and the new Fusion restaurantwas a real treat and the staff are wonderful. Highly recommended.
